Tip #1 – Light Mayonnaise verses Oil, Butter or Margarine
Breaking down the math:
- For the light mayonnaise: 35 calories x 9 tablespoons = 315 calories.
- For the oil, butter or margarine: 120 calories x 8 tablespoons = 960 calories.
Tip #2 – Toothpick Tip and Testing Cakes
Everyone knows to test cakes with a toothpick, and its been said, if it comes out clean it’s done. Well, I’m hear to tell you that if the toothpick comes out clean, most cakes will be over baked and dry. So, I say when testing a cake take a toothpick, insert it in the middle of the cake but, bake it just until the toothpick comes out a little sticky. Like in the image above, there should be small cake particles on your toothpick. Now, the toothpick should not be wet or completely dry, but just a little sticky. Testing your cakes this way will insure they come out moist and delicious every time!
