Do your cookies turn out flat sometimes or thick and dry at other times? Are they burnt on the bottom or around the edges, but doughy in the middle? Ugh…how frustrating! Gourmet cookies are one of my specialties and I’ve been making them for family, friends and fundraisers for years now. For the past 8 months, I’ve also been baking gourmet cookies at Baxter’s, our church’s restaurant, where every cookie has to be, well, perfect. Today I’m sharing My Top 10 Tips for Perfect Cookies every time. I know that’s a tall order, but you can make perfect cookies too by following these simple, but really important tips.
My Top 10 Tips for Perfect Cookies
- Quality ingredients: Use quality ingredients like real butter, real chocolate chips, vanilla extract…etc. This is the first tip and very important key for delicious cookies.
- Room temperature butter: Use room temperature butter or defrost your butter quickly in the microwave. Microwave Tip: Place 1 cup (2 sticks) of cold butter on a microwave safe plate and microwave for 65-75 seconds at 30% power. The butter should be soft to the touch but not melted. If the butter is melted or too cold, your cookies could turn out flat or too thick.
- Beat until fluffy: Beat the butter and sugar until fluffy and then add the eggs and vanilla extract and beat again until very fluffy. See the steps at my Fudgey White Chocolate Cookies.
- Flour, salt, powder and soda: On low, add the first cup of flour with the salt, baking powder and baking soda. This will insure these smaller ingredients are incorporated well into the batter (IMO).
- Remaining flour and mix-ins: Add the rest of the flour, one cup at a time, on low until the flour disappears, don’t over mix. Then add the mix-ins on low just until blended. IE of mix-ins: chocolate chips, nuts, coconut…etc.
- Cookie scooper: No matter what size cookies you are making, be sure to use a cookie scooper, so the cookies are exactly the same size and will bake more evenly.
- Oven temperature: Preheat the oven to 360 degrees F. I found the cookies cook more evenly at this temperature. For a convection oven, bake at 325 degrees F.
- Rack position: Place baking sheets on the 2nd from the top oven rack. Bake one sheet at a time, unless using a convection oven, then place the baking sheets 2 racks apart, so the air can circulate around the baking sheets.
- Baking time: Bake 2 ounce cookies for 10-11 minutes. But ovens may vary, so find the perfect bake time for your cookies. Your perfect cookies should be a little puffy, light golden brown and slightly crackled on top.
- Cooling the cookies: Cool them on the baking sheets for 10 minutes before transferring them to a cooling rack, or cool them completely on the baking sheets for 20 minutes before storing them in an air tight container.
