Three Cheap and Easy Potluck Desserts
First of all, I’d like to give a huge thanks to Heather for allowing me to be a guest blogger on her incredible blog, My Sweet Mission. My husband, James, and I are kicking off the launch of a new recipe section on our blog, Homey Improvements, so it is truly an honor to share with you guys my favorite potluck dessert recipes. They’re all cheap, easy and, most importantly, oh so tasty!
If you’ve ever planned or been invited to a potluck, you’ve probably felt the pressure of bringing something everyone will enjoy. You definitely don’t want to be the one who brings the weird looking casserole that no one touches. You also don’t want to be in the kitchen cooking for hours. Don’t worry, I’ve got the solution!
You can hardly go wrong with dessert; everybody loves it. With these three no-fail recipes, you’ll be in and out of the kitchen with something sweet and tasty in no time.
Dump cakes are awesome. They taste delicious, plus they’re super easy and cheap to make — just like I promised. You can make a dump cake with nearly any fruit or combination of fruit: blueberries, strawberries, apples, pineapple, etc. No eggs, no milk, no mixer are needed. Just dump, bake and eat.
Peach Dump Cake
- 1 – 29 oz. can Sliced Peaches
- 1 1/2 tbsp. cinnamon
- 1 1/2 c. Bisquick
- 1 c. sugar
- 1/2 c. room temperature butter
Preheat oven to 375° F.
Drain peaches and pour into pie pan or 8×8 baking dish. Sprinkle 1/2 tsp. cinnamon over the peaches. In medium or large bowl stir together Bisquick, remainder cinnamon and sugar. Dump mixture evenly over peaches. Slice the butter thinly and layer on top of Bisquick mixture evenly.
Bake in 375° oven for 45 to 55 min.
The crust will be nice and golden brown once baked. This recipe is delicious served with ice cream!
Tasty Trifle Treat
- 1 store bought angel food cake
- 1 (3.9 oz.) package instant chocolate pudding mix or premade pudding in Snack Packs (around 7)
- 1 – 16oz. container Cool Whip
- 1 box graham crackers
Mix all the ingredients you need to make the instant chocolate pudding and then set aside. Rip angel food cake into cubes and set aside. Crush graham crackers and set them aside. Begin layering ingredients, starting with cake, into a trifle bowl or other serving bowl. Layer the pudding on top of the cake layer, followed by crushed graham crackers and cool whip. Continue layers until bowl is full and top with remaining graham crackers.
Healthy Fruit Casserole
- 2 cups oats (I usually do half old fashion and half quick cooking.)
- 1/3 cup brown sugar
- 1 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 1/2 teaspoon salt
- 1/4 cup pumpkin seeds (shelled), optional
- 1/2 cup chopped pecans
- 1 cup sliced strawberries or raspberries
- 1/3 cup semi-sweet chocolate chips
- 2 cups milk
- 1 large egg
- 3 tablespoons butter, melted
- 2 teaspoons vanilla extract
- 1 ripe banana, peeled, thinly sliced
Preheat oven to 375° F. In a large bowl mix the first seven ingredients and half the strawberries and chocolate chips. Then transfer the dry mixture to a 8 x 8 baking dish. Evenly layer the rest of the strawberries, chocolate chips, and the banana. Heat the butter in a microwave safe bowl till melted (around 20 sec.) and then add vanilla, egg and milk. Mix well then quickly pour over the dry mixture in the baking dish. Make sure everything is evenly coated. Cook in the oven for 35-40 minutes.
So, there are three, quick, cheap and easy dessert recipes to make and take to any potluck. I hope you enjoy these recipes as much as I have.
