I was recently contacted by Claire at Sumochef to do a guest post for her Layered Peach Mousse. I loved the idea and thought you would enjoy it too!
If there’s one thing that has always fascinated me, it would have to be creating a mousse. It’s fascinating, and I love how creamy the results can be. Similar to no-bake cheesecakes but instead of the tart and cheesy flavor, I used fruits to create that pleasant taste that my children love. And my favorite is this Layered Peach Mousse!
A fancy dessert that’s easy to do, read on as I show you how to put a unique twist to your desserts for your next event or dinner.
The sweet peaches mixed with a tart strawberry mousse mixture will balance out the flavors and have you wanting more of this creamy dessert! It’s at the perfect consistency, easy to make, and it has that fancy appearance without having to hassle yourself over making it that way.
This recipe makes four small mousses that measure three inches in diameter.
- Graham Base
- 1 cup of graham crackers (250 grams/8.8oz)
- ½ a stick of melted butter (113 grams/4oz)
- Strawberry Mousse
- 1 ½ cups of pureed strawberries (325 grams/11.5oz)
- ½ cup of icing sugar (120 grams/4.24oz)
- 2 teaspoons of gelatin (mixed with two tablespoons of water)
- 1 cup of heavy cream (250 grams/8.8oz)
- 2 tablespoons of granulated sugar (30 grams/1oz)
- Peach Mousse
- ½ tablespoon of gelatin
- 2 tablespoons of water (30ml)
- ¾ cup of peaches, diced (185 grams/6.5oz)
- 2 tablespoons of sugar (30 grams/1oz)
- ½ cup of cold heavy cream (120 grams/4.24oz)
- Strawberry Topping
- ½ teaspoon of gelatin
- 2 teaspoons of water (30ml)
- ¾ cup of halved fresh strawberries (185 grams/6.5oz)
- 1 tablespoon of sugar (15 grams/0.5oz)
- Splash of lemon juice
- Make the thin graham cracker base by putting both graham crackers and melted butter in the food processor. Place it on one-inch plastic rings on a baking sheet to shape it. Press it down firmly and then remove it from the molds.
- Cut 4 strips of parchment paper (11x3 inches) and wrap it around the base of the cakes. Keep the bottom flush with the baking sheet and secure the parchment paper with tape (similar to a collar).
- Prepare the strawberry mouse by boiling both the pureed strawberries and icing sugar. Melt the gelatin in the microwave and add it to the strawberry mixture. Remove it from the heat and let it cool.
- Whip the cream and sugar until it becomes a soft peak. Fold both the strawberry puree with the cream once warm. Place it on top of the base (already lined with parchment paper to keep it in one shape) and put it in the fridge to allow it to set.
- Prepare the peach mousse by sprinkling gelatin over the water and letting it mix. In another bowl, puree the peaches until it's smooth. Combine both puree and sugar in a medium saucepan over medium heat, letting it cook until it bubbles. Add the gelatin and stir everything until it has completely dissolved and then let it cool to room temperature.
- Whip the heavy cream until it forms soft peaks and fold it in with the peach mixture. Pipe it on top of the already firm strawberry mousse and place it in the fridge to set.
- While the mousse is firming up in the fridge, prepare the strawberry topping by sprinkling the gelatin in the water and letting it mix. Puree the strawberries with sugar and lemon juice until it is smooth. Heat the mixture in a saucepan over medium-high heat, cooking until it begins to bubble. Stir in the gelatin until the mixture dissolves. Remove it from the heat and let it cool down. Spoon it on top of the peach mousse and refrigerate again until everything is set.
- Remove the parchment lining once the mousse is set, then add small peach slices. Serve and enjoy!
